200-400 litres of whisky a year; that was the ambition back in the first years. But then Jim Murray, famed author of the annual Whisky Bible, had a sip of Stauning’s pot still.
"What on Earth is this?" he exclaimed. "Whisky-lovers will kill their mothers for a bottle of this. This could possibly become some of the world's best peated whisky."
The team now realized that what started as a hobby project had true potential to become exceptional.

Freshly-baked rye bread, wine gums and hint of pepper on the nose.
Gentle, dried fruit, ripe cherry and peppery oak on the palate, balanced by vanilla and citrus peels, leading to a peppery finish and long smooth, fruity and sweet finish.
Matured for 3-4 years in new American oak barrels.

Lightly smoked, spicy and sweet, a whisky with complexity and structure.
On the nose: cereals, chocolate, oak, caramel, cinnamon and bonfires.
A taste like a smoked chocolate bar with a palate of nougat, caramel, liquorice, sweet apple and oak. A long smokey aftertaste with vanilla, orange, tobacco, dried red fruit and more oak.
Matured for 4-5 years in heavy charred Virgin American Oak barrels and 1st fill, Makers Mark-cask.

Matured for 5-6 years in a mix of 1st Fill bourbon casks, 1st Fill Madeira casks, 1st Fill Jamaica Rum casks and Virgin American Oak casks.
