We hold these truths to be self-evident. Distilleries are not created equal, nor is the whiskey that flows from them.

Dingle Whiskey is a product of its environment. From the localized well water to the immensely manual mashing, alongside the wooden fermentation vessels that feed into the three bespoke copper pot stills, the production is purely Dingle. The micro climate then creates a maturation like no other. We do not manipulate the course of our whiskey, only nature can do that.

The Dingle Whiskey Distillery was crafted and conceived by three independent spirits: Oliver Hughes, Liam LaHart and Peter Mosley. The Dingle Whiskey Distillery came into being in the cold winter of 2012.

Ireland was beginning to come out of the greatest recession in many people’s memory.

However unbeknownst to many, the most significant event in the Irish Whiskey industry in decades was happening in a tin shed in the town of Dingle, Co.Kerry. Witnessed by few, the first Dingle Whiskey Casks were filled on the 18th December 2012.

Three years and a day later on the 19th December 2015, one cask, Cask No.2 was released. Our whiskey was born.

Dingle Single Malt

Dingle Distillery’s hugely anticipated Core Single Malt release is finally upon us and is here to stay.

This Core Single Malt release has been years in the making and comprises of malt whiskey that has been matured in ex-Bourbon, and PX sherry casks.

39% Bourbon, 61% PX Sherry. Bottled at 46.3% and non-chill filtered.

Dingle Single Malt Small Batch No. 5

Bringing this marriage of Bourbon, Pedro Ximénez and Madeira casks together has allowed the Bourbon casks to release a warm aroma of spices.

Creating a unique single malt Irish whiskey bombarding the senses with molten honeycomb and salted caramel.

While the Pedro Ximénez and Madeira casks combine beautifully to bring sun-dried raisins forward, scented with creamy blossom honey and saturated with vanilla. This is a wonderfully warm, lingering and mellow whiskey.

Dingle Gin

In terms of its broad style, this is what is categorized as a London dry gin but the unique character and flavor come from our painstaking and original choice of botanicals.

We use, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape. It’s a formula unknown elsewhere and is calculated, amongst other things, to create the sense of place and provenance.

The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.

Peter Mosley sums up DOG’s unique character in a few words: ‘The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. But, to be honest, you really have to taste it for yourself.
